Wong, sakes is mainly divided into three categories.
The upper level of "Daiginjyo, Ginjyo, Junmai Daiginiyo and
Junmai - Ginjyo" refers to polish rice ratio in 50-60% or below.

for brewing sake, in other words, only core part of rice is used
for better quality of sake brewing...
